Whey protein

Whey proteins refer to the collection of globular proteins. They can be separated from whey which is a by-product of cheese manufactured from cow's milk. It is a combination of beta- lactoglobulin , alpha lactaglobubin and serum albumin which are soluble in their native forms , independent of its PH . It is said that whey has the highest biological value of any protein.

Whey proteins can be denatured (irreversibly changed) by heat. This is something similar to the transformation of the protein in eggs. The protein in egg whites when fired or heated changes permanently from liquid to solid that is white in color. But whey proteins should not be exposed to high heat as they often lose their nature and some bioactive components like cysteine, glutathione etc

Whey proteins come in three forms namely isolate, concentrate and hydrolysate. The concentration of whey protein also contains low level of fat, lactose, cholesterol, carbohydrates and bioactive compounds.
